This is a simple berry cobbler recipe, perfect for two! It's quick to make, using either frozen or fresh berries, and only requires about 10 minutes of prep time before baking.
1. Heat oven to 375°F. Butter your baking dish. Combine berries, 1 tablespoon sugar and 1 teaspoon flour in a bowl. Pour berries into your baking dish.
2. Wipe out or rinse and dry the berry bowl. Use it to thoroughly combine 1/3 cup oats, 1/4 cup flour, 1/2 tablespoon sugar + 3/4 teaspoon baking powder.
3. Cut your cold butter into small slices or cubes, and dump it into the flour mixture. Pinch to combine until the mixture resembles a coarse meal (try not to over-mix to avoid melting the butter). Pour in your buttermilk (3 tablespoons of any type of milk combined with 3/4 teaspoon vinegar) and lightly mix just until everything is moistened.
4. Dump little circles of dough on top of your berries, about 1/2 inch thick. Bake until the cobbler is brown and the juices are thick and bubbly around it, about 30-35 minutes. Serve warm with vanilla ice cream!
